Apple Cranberry Cobbler! A delicious dessert featuring a fruit filling of apples and cranberries, topped with a sweet, shaggy biscuit-like dough made with pancake mix, baked until bubbling and golden.
Preheat oven to 350f. In a large baking dish, add apples, cranberries, sugar, orange zest and juice. Gently mix and set aside. In a mixing bowl, add Krusteaz Buttermilk pancake mix and cinnamon. Whisk until combined. Then, add melted butter, cream and milk. Mix with a wooden spoon until you get a shaggy and sticky dough. Don’t overmix. Scoop 2 Tbsp dollops of your dough mixture on top of your fruit. Lightly press with oiled hands to flatten the dough into disks. Make sure to leave some gaps as shown. Add cubed butter into the gaps on the fruit. Lastly, sprinkle with cinnamon sugar and bake for 45-50 minutes or until bubbling and lightly browned. Remove from the oven and let cool for 15 minutes. To serve, add a scoop of vanilla ice cream or fresh whipped cream. Enjoy!
