A delicious homemade chicken shawarma recipe featuring marinated chicken roasted on skewers, served with fresh vegetables and a homemade tzatziki sauce on flatbreads.
Preheat oven to 400°F (200°C).
For the chicken: In a bowl, combine Greek yogurt, 5 minced garlic cloves, coriander powder, cumin powder, cardamom powder, chili powder, onion powder, smoked paprika, olive oil, juice of one lemon, and 2 tsp salt. Add the chicken thighs and mix well to coat. On a sheet tray, add one halved onion. Place skewers into each onion half. Then, place your marinated chicken thighs onto the skewers and put the tray in the oven. Roast for about 1 hour or until the chicken is fully cooked through and slightly charred.
For the Tzatziki: In a separate bowl, combine plain yogurt, grated English cucumber, 2 minced garlic cloves, finely chopped cilantro, 1/2 tsp cumin, and salt. Mix well and set aside.
To assemble the shawarma: On a flatbread, add some of your sliced roasted chicken, chopped tomatoes, sliced red onion, lettuce, and a generous dollop of tzatziki. Enjoy!
