A classic tuna melt sandwich featuring a flavorful tuna salad with celery, red onion, pickles, and parsley, topped with melted cheddar cheese and fresh heirloom tomato, all nestled between toasted sourdough bread.
1. Dice your celery, red onion, and pickles. Chop your parsley.
2. Add your tuna, diced celery, red onion, pickles, chopped parsley, mayonnaise, mustard, lemon juice (from half a lemon), black pepper, and olive oil to a bowl. Mix well, but try not to break up the chunks of tuna too much.
3. Toast four slices of sourdough bread.
4. Add half of your tuna salad to two slices of the toasted bread (one for each sandwich) and top each with two slices of cheddar cheese.
5. Broil in the oven until the cheese is melted and bubbly.
6. Add slices of heirloom tomato, then season with salt and pepper.
7. Top with the remaining two slices of toasted bread and ENJOY.
